I have a broken door latch spring for the back door of my 1911 touring that I need to fix. It is for the hook.

Any suggestions on finding or making a replacement spring?

I believe the parts suppliers sell door latch rebuilding kits with new springs.

Go to your local locksmith or at least one that works on safes. The spring is made from spring steel and can be fabricated. The material is avaliable in long strips from lock and safe parts suppliers. The locksmith may have some sources to buy the spring steel strips or you can look on line for a supplier yourself. Mcmaster Carr may be a good start. They have a lot of specialty items.
You can mount a steel bolt or rod in a vise and wind the spring you need. You may need to make a jig to do it. Its not that hard to do.
