New Aluminum pistons, rings
New timer, plugs
Crank it over and it won't start - choke it, same thing.
Put my hand over the carb and it fires right up. I can take my hand off and it runs great - just that initial start up I have to put my hand over the carb.
No intake or exhaust leaks. New gaskets on intake, carb and exhaust. New gas tank, sediment bowl and fuel line.
What did I miss? This happens warm or cold. Something to do with the choke plate in the carb maybe?

Sounds like your choke is not closing completely, or maybe your choke rod inside connection is thru the hole for the radiator pull rod and you are not getting any choke action when you start.
I assume that when the engine is warmed up ,it starts normally without the choke.
This is one Model T guy's opinion, no gurus here!
It runs good after starting so your needle adjustment/jet sound OK. Make sure the choke is actually working, (linkage ect.). If you see nothing external pull the hot air pipe if you have one and check the choke plate operation. You'll probably need a mirror to look in there if it's a fully assembled car. Your hand over the intake is substituting for normal choke operation.
