I am considering re-upholstering my seat and noticed that Mac's only provides a black vinyl, was the original seats vinyl or leather and is Mac's the best place to buy it?

Leather was long gone by 1924. Ford used a material called artificial leather and we all use vinyl.
While Mac's Cartouche is an option, Classtique is another company I use. I am sure others have their choices and will chime in.
Macs kits are nice, I would recommend buying a little more padding from a fabric store for the back cushion.
The Cartouche kits are lacking and really do not have enough proper padding .Trim is less then authentic.Instructions are less then fair for a newbee not knowing what to look for during installtion....
Plus I've had the several button caps come off very easy while slidding over the seats in normal fashion. They Classtique or other.
Upholstery kits are like spark plugs, transmission band lining, type of paint, and so it goes. Everyone has their own preference.Whether its cost, type and for some its service.
And so it goes in the world of Model T's.
I used a Mac's kit in my '24 and I was happy with it.
Classtique is the only way to go for kits. Don't even think of Macs.
I agree with Larry. Classtique is far superior to any other T upholstery I have used. I have done 3 cars. Of course, this is only my opinion.
