When using the thick crankcase corner braces sold by the vendors how long should the crankcase to block/hogs head bolts be so that a cotter pin can still be used to secure the nut? What about the bolts that thread into the hogshead near the starter?

Stick a bolt in there and see. It would be the next size longer than the rest of the bolts or take a regular bolt and drill a hole for the cotter key.
Or use a self locking nut.

Well, the older bolts are 1-5/32" long according to Ford, and the reinforcements are 1/8" thick, so the new bolts should be 1-9/32" long.

R.V, I believe the new reinforcements are 1/4" thick.

1 5/32 + 1/4 = 1 13/32. :-)

I would think a 1 7/16 would be ok. The closest common length would be 1 1/2,
