Hi,
Will a good rebuilt/stock 6V starter be able to crank over an engine fitted with a Z head? 5.5-6:1
Or will I need to look at 12V alternatives.

It will do just fine. No worries.
I have not had any trouble with my 6 volt battery cranking the engine with a Z head. Mike

It IS harder to crank a T with a high compression head. Trust me. I put a high compression head on my '14 and I could not crank start it anymore! After a week of depression, I finally "bit the bullet" and put a starter on it. As you can probably guess that involves pulling the engine and tranny and putting on a '19 flywheel and hogshead. #*%&**. The starter that I put on is from Antique Auto Electric (a 12V Delco-Remy adapted for a T and a T bendix).
Bless me father for I have sinned! But it starts fine now.
