Model T Ranch has another version that should be available since Fun Projects may have problems supplying orders these days?

The best think is to leave them stock.

I have been waiting for one for a month, no one knows when they will be in stock.

If you're getting a Fun Projects pinion bearing, non-adjustable is just as good as adjustable.

Run the stock set up. It'll roll forever.

I run the stock set up on my primitive pickup just because I scored and found one good Hyatt among the eight or so I've gathered over the years - all the others are worn out. And I was lucky to find a NOS spool to buy, the 21-27 style isn't restorable with new sleeves like the earlier style, so I'd say it's getting hard to assemble good originals.

Stoltz adjustable version is really adjustable - no need to shim for more than correct play for the differential in the housing.
