Received my car with the bolts and shims missing between the block and hogshead. I can figure out the bolt size, but do you use feeler guages to determine shim thickness? Do you need to use the stator shims...?

You may not need shims at all. It will depend on the condition of the Sump and how bent it is, if at all.
I’d start by bolting up the Pigs Head without shims and see where the 4th main Bearing is in relation to the transmission output shaft. My 26 doesn’t have any Shims

I don't know whether or not the engine is in the car, but the best way to align it is with the engine out on an engine stand where you can rotate the engine with the nose down. Then you take the 4th main with two bolts started through the crankcase and see if you can move the 4th main in and out using the bolts as your guide. It should not bind on the output shaft. You can then add or remove shims to change the alignment so it fits without binding.
