I’m about to tackle removing valve guides from Roof Liberty 8 Overhead, any suggestions.

If they are like the RAJO cast iron valve guides, do not attempt to remove them. Instead, install valve guide inserts.

I totally agree with Mark. I have an 8 valve Roof head that I recently restored. I bored the original guides oversize and pressed in thin wall sleeves. On my head it appeared the guides might have been a cast guide that the actual head was cast around. Therefore I would not try to press those guides out. You may to irreparable damage, not totally sure but use the thin wall sleeves any automotive machine shop can do the job.

just sayin'

In the trade they are called K-liners. The old guide is reamed, the liner fitted and expanded/ reamed to suit. It is a job for a machine shop, to make certain the guides remain accurately aligned to the valve seats. Being and OHV head makes it easy for modern machine shops to handle.

I've had a machine shop install K lines in motorcycle heads. They work great. Go here to find a machine shop near you in the US https://www.sbintl.com/

Thanks for the sage advice. The engine shop was able to put new valve guides. My next question is want do recommend for valve guide clearance?

That is a question for the machine shop that installed your guides. Some types may require different clearances. They will likely have already set the clearance for you. Trust their expertise.
