Can someone tell me approximately how many, and the various sizes of rivets were used in one (1916-1921) Model T touring car?

No, they are all over, too many to count. Pick a system or an assembly and there are rivets. The steering column, steering wheel, ignition switch, the frame, rear axle housing, driveshaft, top irons, floor boards, generator, headlight buckets, horn, the list goes on and on.

The largest rivets perhaps the frame to crossmembers, and the smallest perhaps the coil point vibrator bridge rivet

Many of the rivets used on a Model T are available from Jim Dix (Big Flats Rivet Co.). You can Google it. Some are easy, others not so much. I finally gave up trying to find a correct top iron rivet and made one myself from a bolt.
The inevitable often happens.

Rivets are an interesting, and necessary subject. I've always been careful on them. Some that are sometimes overlooked are the semi tubular rivets that hold the draft deflector on the floorboards of later T's. Lang's carries those. Two that are usually the wrong type are the two semi tubular rivets that hold the ignition switch together. They are very small, and the heads require resizing down to the original size.
