What's the best headgasket steel or copper?

Steel works fine, but unless you are good about maintaining your coolant, they can rust out. Copper seals well and obviously won't corrode. Just my experience.

Assuming an OLD engine and assuming that you did NOT plane the block nor head, then maybe the best is a steel gasket with a copper coating.
